The menu at MAINE focuses on what truly matters - good food made from the freshest ingredients, carefully sourced, perfectly cooked, presented simply and shared over a glass of inspiration. Everything is designed around the sense of gathering and generosity, friends in spirited conversation under moonlight, creating memories and using every occasion as an opportunity to celebrate.

A Storied Place

Set against the picturesque salt pans of Salinas, MAINE Ibiza is housed in an 18th century whitewashed parish (parocchia) by the small church of Sant Francesc de s'Estany. This UNESCO world heritage wetland produces Ibiza’s prized ancient treasure, the salt flowers that have earned the name ‘white gold’ by all the settlers that have come here since the 8th century BC - the Pheonicians, the Greeks, the Moors and the Catalans. The view from the MAINE is an almost lunar landscape with a silver shimmering horizon of white gold and opal-coloured sunsets, where white flamingos migrate and feed every day.

AN INFINITY OF WONDERS

Ibiza is the mystical home to Sirens and Sea-Nymphs in Homer’s ‘The Odyssey’. Heeding the sirens calls, the Pagan ‘Lotus eaters’ in the famed poem, live in a perpetual state of bliss worshipping the lunar diety of sexuality, fertility and dance. Two and a half thousand years later, Ibiza is still this unearthly paradise for wanderers and dreamers who wine, dine and dance in worship at the shrine of excess. Here people come together as strangers and leave as lovers.

FOOD IS OUR LOVE LANGUAGE

Food is a ritual infused with real sense of provenance, working with local farmers and fishermen, everything has been painstakingly sourced by our chefs - vegetables that flourish in the red earth, the freshest seafood and Prime grain and grass fed beef. The menu is littered with guilty pleasures, all washed down with a bottle of chilled wine, made from grapes baked in the island sun.

A PLAY OF LIGHT AND SHADOWS

Designed by MAINE founder, Joey Ghazal, the interiors pay homage to the natural beauty and tranquillity of the surroundings. There are nods to Spanish brutalism and monastic minimalism, giving a contemporary touch to an authentic Ibicenco parish (parrocchia). In all its wabi-sabi style, the MAINE Ibiza is a place of naked beauty – simple and authentic, deeply familiar and yet quite unexpected.
