The Josephine Oyster embodies a lineage of dedi-cation. In Marennes-Oleron, Henri Gillardeau birthed his oyster farming dream with Mason Gillardeau in the late 1800s. Over a century later, Maison Gillardeau stands synonymous with culinary refinement, offering premium oysters from Ile d'Oleron. The Gillardeau spirit thrives through generations, with Thierry Gillardeau honoring this legacy, bestowing his daughter's name upon their signature oyster: Josephine.

The Champagne of Oysters

Gillardeau oysters are of fleshy and delicate texture and a balanced flavor, they are difficult to match, and the manual labor involved can be likened to the production of Champagne bottles. Twice per day, these oysters are turned by hand according to the tides.  They are initially raised in Normandy for their first two years, and then finished in the salt ponds of Marenne-Oleron. Whether enjoyed on their own or paired with a Chardonnay or a vintage Champagne, these oysters are crafted to make a lasting impression.

Food For Kings

Popularized by the French bon vivant in the 17th century,  The Fine de Claire is a well known French oyster that has undergone its last ‘affinage’ in the ‘claires’.  These claires, which are connected to the open sea, are shallow closable ponds in the past used mainly for the production of salt. Thanks to the affinage in the claires, these oysters have a stronger, slightly sweeter taste.
